smoke and fry
i use water kosher salt till an egg floats, liquid smoke, 2 cups brown sugar, if you like it hot add pepper seeds this is good for fish and jerky, i smoke salmon walleye catfish white bass never tried sheep head. when i cook my fish if i deep fry i use peanut oil and drakes batter mix and stale beer let the beer sit out over night the carbonation makes not stick to the filet as well. to pan fry i like to make my own cracker crumbs in food processor with garlic powder,onion powder and season salt till its a very fine. then dredge in flower coat with a egg wash dredge in cracker crumbs and fry in a cast iron skillet with pure lard now if you got to watch your cholesterol just eat less this is a lot of work but worth it the taste is very good this i use just for family at home if im having a big fish fry we always use drakes you have to eat the drakes right away or it gets a little soggy but the pan fry is great cold or heated up with microwave. serve with fries and coleslaw and homemade tarter sauce take mayo add pickle relish dill or sweet little mustard to give it color and some lemon juice mix up and enjoy
