I also like the crushed cracker crumbs but I add Italian bread crumbs and some of my own seasoning including some flour, then dip in the egg wash and deep fry at 375 degrees, any less temp and the fish will absorb the oil..........
Got this tip from Legasse on his cooking show. Used many different coatings but this one family likes best.
