Andys Cajun is normally what I use, I have one of the large bags of it at home and is my go to 90% of the time just for the ease of it. My favorite though but takes more work is simple three stage breading process with the seasoned flour, eggwash and then a breading. Breadcrumbs are great as well as crackers as some people have stated here are also great.You can really increase the finished volume of the perch with that method to feed more people.
I am really curious about that Kentucky Kernal seasoned flour that Bryan is talking about. The ides of a fried chicken crust on my perch sounds great. Any idea where you get that in central Ohio? If not I will be down in Portsmouth in a few weeks, I may have to look for it there since I will be right next to KY.

I buy it at Walmart so I would think they all probably carry it. Just used that stuff on Monday to make fried chicken...DELICIOUS!

try adding a little pancake mix to whatever you use, kids and the "I dont like fish" people will love it!

I soak in buttermilk for bout 1/2 hr then use Skeeters breading. Mmmmm good

andys red just rinse dip and fry but a good egg wash is hard to beat

perch batter
milk and egg dip and Italian bread crumbs or andys with yellow corn meal, Reel sport Team.

I use Kentucky Kernal seasoned flour. Its a coating that tastes very similar to Kentucky Fried Chicken. It's pretty bad ass if you like spicey/seasoned flavor.

perch coating
first time ever on this site but wanted to share something i have used for 20 years on all my fish,the best by far i have found-just try it-frying magic,any store like wallmart,make shore fish are good and clean if sitting a while and pat dry with paper towel,dont put any liquid on them,this has to go on very thin or it will be overbearing,i use a zip lock and the frying magic shake some filets and fry,just make shore they are not real wet before you coat,hot oil and each side quickly and have fun.

use frying majic and you will never switch,been using it for 30 years and still cant beat it.just keep it thin,make shore fish are quite dry or it will be over seasoned.
