Smoked White Bass

1 cup white wine
1cup water
1 cup soy sauce
3 cups brown sugar
1/4 cup kosher salt
1 tea spoon black pepper
1 tea spoon onion powder
1 tea spoon garlic powder
1 table spoon hot sauce
soak overnight great for salmon and walleye just did some white bass turned out ok cut off head tails and gutted did hole fruit wood for smoke

I smoked a white bass once. That sucker was hard to light!

I now ave many recipes. I am trying the cherry juice one. Brought redfish home from LA. ( another story). Fish is ok, tastes like tilapia, thick fillets. I am going to smoke some f hem as well.
