Flavor of Walleye
I haven't had many walleye in my lifetime, but I do have a question...
Do Walleye from different times of the year taste different? As in say spring,winter, summer and fall due to water temperatures, spawning??? Went out this spring on jigging trip and all I can say is that Erie Eyes sure taste better than what we have here in Indiana in these small lakes.

Seems like the colder the season, the less oily the filet. Walleye caught thru the ice seem to be the prime filet, if you will. Just seems to taste less oily than a summer fish. I know it's walleye but it just tastes better !!

I think it depends more on how you take care of the fish after the catch. I bleed mine and put them on ice, if you let the fish get warm I think they have a stronger taste and the meat is not as firm.

I agree. I bleed mine and them throw on ice and keep them covered in ice. Cold fish are happy fish!
