Why the rubbing alcohol?

Because, if you just freeze them in water....when they thaw, they will just be soft and mushy, and not stay on the hooks very long. If you salt them and freeze them, it's not much better. But, if you freeze them in the alcohol, they firm up... and, will stay on the hooks longer, giving you a much better chance to hook the fish.
