Well, I have heard about the walleye wings for a while now and finally decided to give them a try. For those who have never heard of them, it is the " V " under the gill plate that is normally tossed out with the head after you fillet the fish. I really didn't expect them to be all that great but I have to say I was pleasantly surprised! I battered them up in golden dip through them in the fryer and was treated to a sweet tasting firm white meat that I had to eat like a large chicken wing. A lot more meat than I expected too! The bones are larger and somewhat flat and easy to pull out as you eat them. With the long drive for me up to the lake, I was pretty happy to get a couple of extra meals out of the cheeks and wings. I'm sure a bunch of you have been using the cheeks and wings but I wanted to mention it for those who have never tried it. What are some of your favorite recipes for you who are wing eaters?
