Can you use this chart to calculate other speeds? As an example; Would a 75 foot lead produce a 15 foot depth at 1.0 MPH?

NO although speed does play a factor on the depth but not THAT big of a factor.

I am sure you can. I just purchased a Smart Troll system, I have to pull the boat to install. Once I have it installed, I will have so much more helpful data.

What I am saying is reducing speed from 2mph to 1mph does not cut the depth in half.
