You should get another partner and book a charter with Juls or pork chop and they will teach you everything you need to know, where, why and how. You get a lot of knowledge for a small price. It is well worth it to take a trip with an experienced captain that is willing to share all the info they can with you, I am sure there are other captains that would share info with you but these are the two that I know will share.
