Absolutely correct about leaving fillets whole. A buddy stayed on Kelley's for a week and chunked his fish up each day. They received 7 tickets for improper cleaning. I like to "Y" the fillet. No need to zipper through the tail, their are no bones there. If you give fish to someone they actually look like a fillet instead of fish bites.
