I skin the white perch instead of scale them. After they are cooked and get cold the skin is rubbery. Skin them an they are great. They are actually from the bass family and not the perch family. Elrod.

Just wondering if the meat is red like the white bass. I tried white bass and they are too strong tasting for me.
