    Default The Best Deep Fry Mix~Perch or Walleye

    Ok here it goes. Lets get out the best mixes for frying those tasty fish.
    ~ Water Dog likes Drakes 1 cup and 1 cup of four ( got to watch my salt)
    also~ Youngs is good too~! I use beer to mix it up just enough to make a nice batter not too thick and not too thin.

    Ritz crackers, flour, egg/milk wash.

    *Ritz crackers crumbs - put in ziplock bag and use rolling pin to smash up.
    *flour and any seasoning you like. In ziplock bag.
    *egg / milk wash in bowl.

    1. Fish in flour first (shake bag)
    2. in egg / milk
    3. in Ritz crumbs (shake bag)
    4. back to egg / milk
    5. 2nd coating of Ritz.
    6. Fry in oil.

    Enjoy.

    Fry-n-Magic mix, add a little lemon/pepper & onion powder. clean filets and soak in milk for 20 mins. take filets and place in fry-n-magic mixture. Fry in oil 340 degrees until golden brown.
    Served last night at church picnic and it was a hit. Simple and tasty.

    Got this other recipe off this forum.
    Mix equal amounts of each of mayo, sour cream & Parmesan Cheese. whatever size you do, use equal amounts, I usually use 1/3 cup of each to cook 2 fish.
    butter glass baking dish place filets in pan, season with spices to your liking, then put the mixture of equal amounts of mayo, sour cream & Parmesan cheese over top of filets. Sprinkle some Parmesan Cheese on top. Bake at 325 for 25 mins. bake time varies depending on thickness of fish.
    After baking sprinkle either crushed crackers or crushed nacho chips on top along with more Parmesan cheese, broil until chips/crackers & Cheese are dark brown. ENJOY!!!! Then bake a potato and put the remaining sauce from the pan you cooked the fish in and spread over baked potato.
    Delicious Stuff & easy. Try it.

    I also like the crushed cracker crumbs but I add Italian bread crumbs and some of my own seasoning including some flour, then dip in the egg wash and deep fry at 375 degrees, any less temp and the fish will absorb the oil..........
    Got this tip from Legasse on his cooking show. Used many different coatings but this one family likes best.

    I most often use Dave's Original and Spicy and blend the two half and half with a egg wash. For a change Drakes is a option.

    Default here's my bam

    call it the 3-2-1- parts mixture.

    3 parts Italian bread crumb
    2parts buttermilk pancake flour
    1 part corn starch for the sticker

    mix all ingredients into a large plastic ice cream bucket, I do this because I freeze whatever isn't used up for more applications later on.
    Its up to you how much you make up for future usages.
    Into that mixture I will add seasoning salt and cayene pepper to taste, this is very important you don't over do it.

    Step one you put the fillets into that ice cream bucket and shake until fully coated.
    Step 2: I make an egg/milk wash and add tobasco and lemon juice(not too much) to bam that wash up, dip your fillets into that wash and
    Step 3: then dip the floured washed fillets into panko bread crumbs

    put your fillets on a cookie tray/cover with tinfoil etc. and refrigerate for a few hrs, I've done them over night also, it adheres all the ingredients much better into the panko.
    Lastly, get some peanut oil, its the best for cooking fish bar none! It has a nice high cooking point, way better than vegetable oil or canola oil which comes from the rapeseed family of which they make mustard gas with, so you do the math, Cook at 325-350. Your taste buds will be over joyed.

    fwiw, I even use the flour mixture on freshly cut potatoes for frying, very good indeed.
