I have never smoked walleye, but with my very old smoker I used the most basic recipe that came with the smoker. (1/2 cup each sugar and kosher salt, 1/2 quart warm water then 1/2 quart cold water for the brine, then soak in brine over night). I used it for salmon and it worked out so well that I never tried anything else. If your smoker came with any recipes, give them a try!
I think unless the skin is on you are going to have a mess trying to brine walleye.
I have baked some walleye on the grill before and it flakes apart pretty easily when it gets done.
I would think if you just put it on some foil or even a cedar plank you would be good to go.
Season it if you wish.
I have a Traegar pellet smoker but have never tried smoking walleye, only salmon.
I would just be careful to not dry it out too much

Smoke salmon, air fry or pan fry walleye
Well this was a BIG hit at a party last night. Every bit as good as smoked salmon or trout.
1. Use smaller walleye fillets (15 - 20" fish), skinless, completely thawed.
2. Brine overnight with 2/3 cup kosher salt, 1/4 cup brown sugar, 8 cups water.
3. Rinse off brine well or it will be way too salty.
4. Place on foil trays, poked with fork to allow juices to drip out.
5. Fill smoker reservoir with water.
6. Add 1/2 cup wet alder wood chips every half hour. Smoke at 215F for 2.5 hours.
7. Smoke for additional half hour at 250F until browned.
