When I'm fishing and catch bigger white perch I keep them. I have never heard anyone complain when eating them. Give it a try next time when your fishing.
Nothing wrong with white perch.
They don't have the sweet "nutty" taste of a yellow perch, but they are good eating with a very mild flavor. Not at all like a white bass.
In Virginia and the Carolina's they are sought out just like the yellow perch here.
Actually, in South Carolina they are commonly called "Virginia Perch" and are standard fare for fish fry's.
Fill up the cooler ! No limit on the white ones !
My wife's grandfather keeps the bigger ones. He told me that as long as you eat them fresh, they are pretty good
