Same way I fry my walleye. Egg wash and dip in Dorsel's self rising white cornmeal with a little salt and pepper to taste. Fry in the skillet of oil and be heppy!

My favorite
I'll throw this one out for those who want it super easy and crunchy. One sleeve of white crackers + one half sleeve of Ritz. Crush them down somewhere between crumbs and flour, depending on your taste.
Dip fillets in egg/whole milk mixture, then press fillets on each side in the cracker mix.
It's really simple, and I can't tell you how many times the "I don't like fish" folks loved it. It works well on kids, too, because it's not heavily spiced like some other coatings.
We also make our own tartar: Miracle Whip, sweet relish, dash of yellow mustard, lemon zest (very important for a lemon flavor), and a little lemon juice.

Use an egg wash with a Zattaran powder mixed in. Then bread and fry.
The breading is a new thing I've been using. Andy's brand. It comes in different spices.
Ok, now im hungry, guess what I'm having for dinner tomorrow ?Rookie Perch fisher, veteran Perch eater.

Rocky Madsen's Fish Crisp
If you can get hold of some Rocky Madsen's Fish Crisp, you won't regret it. They have original, and other different seasonings like cajun or beer batter. Nice and crisp, not too heavy. Just use an egg wash and shake it in a bag. We have used a lot, but since I found this, it is all we use. I buy it in Canada, it's so good we stock up and bring it back when we go fishing up there. You can buy it off the internet but a little more pricy that way. I have heard it is in stores in states now but haven't seen it.

Try Fryin' Magic Seasoned Coating Mix. Just rinse fish and put in seasoning then put on a plate and let set for about 15 min. then fry. Really good. I dont add any other seasonings to it.
